Label Recebo |
Elaboration Paleta made following traditional artesanal methods from Iberian Pigs fed exclusively on acorns and natural pastures from the Dehesa during the Montanera period. Dired in natural drying houses and matured in the bodega for up to 18 months. |
Tasting Notes |
The smooth textured meat and with its delicate flavour make this a highly recommended product for its price. Characteristic brilliant pinkish/purple to red in colour, with fine marbling due to excellent penetration of the acorn based fats in the muscular tissue. Average weight of 4.5 to 7 kg for a whole Paleta.
