Elaboration Made using traditional, artesanal techniques, the piece is cooled, cut, and the external fat is trimmed. The piece is then salted, rinsed, balanced then dried and cured in the bodega. |
Tasting Notes |
Texture: The lean part is resistant to the touch. The fatty part is unctuous and smooth when rubbed. Appearance: "Half-moon cut", yellowish-grey outer fatty layer. Black hoof, with some marbling. Covered with a layer of mould which turns black when touched. The cut is uniform in colour with typical marbling due to infiltrated fats. Flavours and aromas:Persistent and instantly recognisable aroma. Exquisite flavour. Delicious bouquet, distinct acorn flavours from infiltrated fats.. |
